Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup shredded lettuce
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes by washing them thoroughly and piercing several times with a fork.
  3. Bake the potatoes directly on the oven rack for 45-60 minutes, until tender.
  4. Cook the ground beef in a skillet over medium heat until browned, about 6-8 minutes. Drain excess fat.
  5. Season the beef with taco seasoning according to package instructions.
  6. Finish the potatoes by cutting them open and fluffing the insides with a fork.
  7. Assemble tacos by spooning seasoned beef into each potato and topping with cheese, lettuce, sour cream, and salsa.
