Stuffed Bell Peppers

A delightful combination of textures and flavors, these stuffed bell peppers are versatile and satisfying, perfect for busy weeknights.

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef (or substitute turkey, chicken, sausage, or a vegetarian option)
  • 1 cup cooked brown rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat a drizzle of olive oil in a skillet over medium heat. Add the diced onions and minced garlic, sauté for 3-4 minutes.
  4. Cook the ground beef until browned, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes.
  6. Spoon the filling into the hollowed bell peppers and top with shredded cheese.
  7. Bake covered with foil for 30 minutes, then remove foil and bake for an additional 10 minutes.
  8. Enjoy hot from the oven.
