Slow Cooker Garlic Herb Pot Roast

A comforting dish that brings rich flavors and tender meat to your table with minimal effort, perfect for busy families.

Ingredients

  • Beef Chuck Roast (3 to 4 pounds)
  • Salt and Pepper
  • Olive Oil (2 tablespoons)
  • Garlic (4-6 cloves, minced)
  • Fresh Herbs (2-3 sprigs each of rosemary and thyme)
  • Beef Broth (2 cups)
  • Onion (1, chopped)
  • Vegetables (Optional: Carrots, celery, or potatoes)

Instructions

  1. Season the beef chuck roast with salt and pepper on all sides.
  2. Sear the roast in a skillet over medium-high heat with olive oil until browned, about 3-4 minutes per side.
  3. Add minced garlic and fresh herbs over the top of the roast in the slow cooker.
  4. Prepare any additional vegetables and place them around the roast.
  5. Pour beef broth around the roast, avoiding the herbs.
  6. Cover and cook on low for 8 hours or high for 4-5 hours until tender.
  7. Serve the roast sliced or shredded, with vegetables and broth.

Notes

Let the meat rest for at least 10 minutes before slicing to maintain juiciness. Avoid overcrowding the slow cooker.
