Ingredients

  • 1.5 lbs beef chuck, cut into bite-sized pieces
  • 2 lbs potatoes, diced
  • 1/2 cup unsalted butter
  • 4-5 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the ingredients: In a slow cooker, combine the beef chuck, diced potatoes, onion, thyme, salt, and pepper.
  2. Make the garlic butter: In a small saucepan, melt the butter over low heat. Add the minced garlic, sautéing for 1-2 minutes until fragrant.
  3. Combine the garlic butter with the beef and potatoes in the slow cooker.
  4. Add the beef broth into the slow cooker, then stir gently to combine all ingredients without breaking up the potatoes.
  5. Cook on low for 7-8 hours or on high for 4-5 hours until beef is tender and potatoes are cooked through.
  6. Garnish with fresh parsley before serving.

Notes

Beef chuck works well for flavor and tenderness. Substituting with chicken or a meat alternative is a great option. Consider adding carrots or celery for extra richness.
