Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 cup cooked rice
  • 1-2 avocados, diced
  • 1/2 cup chopped fresh cilantro
  • 1 cup shredded cheese
  • 1 can (15 oz) beans, rinsed and drained
  • 1/4 cup cilantro lime vinaigrette

Instructions

  1. Prepare the chicken: Place the boneless, skinless chicken breasts in the slow cooker. Pour the salsa over the top, ensuring the chicken is well-coated.
  2. Cook the chicken: Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is fully cooked and tender.
  3. Shred the chicken: Using two forks, shred the chicken directly in the slow cooker. Mix it with the salsa to soak in the flavors.
  4. Add other ingredients: Stir in the cooked rice, diced avocados, chopped cilantro, shredded cheese, and beans. Mix well until everything is evenly combined.
