Slow Cooker Broccoli Beef

A comforting and flavorful slow cooker dish featuring tender beef and vibrant broccoli in a savory sauce, perfect for busy weeknights.

Ingredients

  • 1 lb beef, sliced thinly
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil
  • 1/2 cup water
  • 3 cups broccoli florets
  • Cooked rice for serving

Instructions

  1. Prepare the sauce: In your slow cooker, combine the soy sauce, brown sugar, cornstarch, minced garlic, grated ginger, sesame oil, and water. Stir until well mixed.
  2. Add beef: Place the sliced beef into the slow cooker. Stir thoroughly to ensure each piece is coated in the sauce.
  3. Set the slow cooker: Cover and cook on low for 5-6 hours or on high for 2-3 hours. If cooking on high, check at the 2-hour mark for tenderness.
  4. Add broccoli: In the last 30 minutes of cooking, add the broccoli florets. Stir to combine, cover, and allow the broccoli to steam until bright green and tender.
  5. Serve: Once cooked, serve the beef and broccoli over a bed of warm cooked rice. Enjoy!

Notes

Slice against the grain for tender bites. Adjust cooking time as needed for tenderness and use fresh broccoli for the best texture.
