Easy Vegetable Soup

A comforting and nutritious vegetable soup that’s quick to prepare and adaptable to your favorite vegetables.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped

Instructions

  1. Sauté the vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.
  2. Add garlic and other vegetables: Stir in the minced garlic, diced zucchini, and diced bell pepper. Cook for another 5 minutes until fragrant and slightly tender.
  3. Incorporate tomatoes and broth: Add the canned diced tomatoes (including their juices), vegetable broth, dried oregano, dried thyme, and season with salt and pepper. Bring this mixture to a boil.
  4. Simmer the soup: Once boiling, reduce the heat and let the soup simmer uncovered for about 15-20 minutes. This allows the flavors to meld together beautifully.
  5. Add greens: Stir in the chopped kale or spinach and cook until wilted, about 3-5 minutes.
  6. Serve hot: Ladle the soup into bowls and enjoy the warmth of your homemade vegetable soup.

Notes

You can substitute vegetable broth with chicken broth if not making it vegetarian. Feel free to add other vegetables such as green beans or peas for extra variation.
