Delicious no-bake treats made with creamy Greek yogurt, rich peanut butter, and a chocolate coating, perfect for a quick snack or light dessert.

Ingredients

  • 2 cups plain Greek yogurt
  • 1/2 cup natural peanut butter
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 8 oz dark chocolate chips
  • 2 tablespoons coconut oil
  • Flaky sea salt

Instructions

  1. Mix the Base: In a large bowl, combine the Greek yogurt, peanut butter, honey, and vanilla extract. Stir until smooth.
  2. Portion the Mixture: Using a small cookie scoop, portion the yogurt mixture into bite-sized balls and place them on a parchment-lined baking sheet.
  3. Freeze the Bites: Freeze the yogurt balls for at least 2 hours or until completely firm.
  4. Melt the Chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Melt in 30-second intervals, stirring until smooth.
  5. Coat the Bites: Dip each frozen yogurt bite into the melted chocolate, ensuring full coverage, then place back on the baking sheet.
  6. Add the Finishing Touch: Immediately sprinkle each chocolate-coated bite with flaky sea salt while the chocolate is still wet.
  7. Freeze for another 30 minutes or until the chocolate has set completely.

Notes

For added texture, consider using chunky peanut butter. Use parchment paper to avoid sticking.
