Jalapeno Popper Keto Chicken Salad

A delightful and savory chicken salad inspired by jalapeno poppers, packed with protein and low in carbs, perfect for meal prep or gatherings.

Ingredients

  • 2.5 lbs Chicken Breast (cooked & chopped)
  • 4 oz Cream Cheese (softened)
  • 1 cup Mayonnaise
  • 1 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • Salt and Pepper (to taste)
  • 4 slices Cooked Bacon (chopped)
  • 1 large Jalapeno (seeded & chopped)
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. Cook the chicken using your preferred method for 15-20 minutes. Chop into bite-sized pieces.
  2. Prep the bacon until crispy, then chop. Seed and finely chop the jalapeno.
  3. Mix in a bowl the cooked chicken, cream cheese, mayonnaise, garlic powder, chili powder, salt, and pepper until creamy.
  4. Add in the chopped bacon, jalapenos, and shredded cheddar cheese, folding gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving cold with lettuce or low-carb crackers.

Notes

Ensure chicken is cooked to 165°F; adjust spice levels to taste. Mix all ingredients thoroughly for best flavor.
