Keto Jalapeño Popper Casserole

A flavorful and satisfying casserole that combines the classic taste of jalapeño poppers in a hearty, low-carb dish perfect for dinner or potlucks.

Ingredients

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4-6 jalapeños, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup scallions, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the chicken, cream cheese, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Spread half of the sliced jalapeños at the bottom of a greased baking dish.
  4. Spoon half of the chicken mixture over the jalapeños.
  5. Add half of the shredded cheddar cheese on top of the chicken mixture.
  6. Layer the remaining jalapeño slices on top of the cheese, followed by the rest of the chicken mixture.
  7. Top with the remaining cheddar cheese and crumbled bacon.
  8. Bake for 25-30 minutes until bubbly and golden brown.
  9. Garnish with chopped scallions if desired before serving.

Notes

For a creamier texture, ensure the cream cheese is softened. Adjust jalapeño quantity based on spice preference.
