Chicken Parmesan Zucchini Boats

Zucchini boats filled with chicken, topped with gooey cheese, making a comforting and healthy weeknight meal.

Ingredients

  • 4 medium zucchinis
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup tomato sauce (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the zucchini by slicing them in half lengthwise and scooping out the center.
  3. Season the hollowed zucchinis with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  4. Stuff each zucchini half with the cooked chicken and top with mozzarella and Parmesan cheese.
  5. Bake the zucchini boats for 25-30 minutes until tender and cheese is bubbly.
  6. Serve hot, optionally with a side of tomato sauce.

Notes

Choose firm zucchinis for the best texture, and avoid overstuffing to prevent spillage.
