Honey Lime Chicken Avocado Rice Stack

A vibrant and fresh meal that combines tender, marinated chicken with creamy avocado and fluffy jasmine rice, perfect for weeknight dinners or meal prep.

Ingredients

  • 1/4 cup honey
  • Juice of 2 limes
  • Salt and pepper, to taste
  • 4 boneless, skinless chicken breasts
  • 1 cup jasmine rice
  • 1 ripe avocado
  • Fresh cilantro, for garnish
  • 1-2 bell peppers, diced

Instructions

  1. Marinate the chicken by combining honey, lime juice, salt, and pepper in a bowl. Add chicken breasts and coat evenly, then let marinate for at least 30 minutes.
  2. Cook the jasmine rice according to package instructions, which usually takes about 15 minutes. Fluff with a fork once done and set aside.
  3. Grill the chicken on a preheated grill or skillet over medium-high heat for about 6-7 minutes on each side, or until cooked through. Let rest for 5 minutes before slicing.
  4. Prepare the avocado by slicing it in half, removing the pit, and cutting into thin wedges.
  5. Assemble the stack by layering rice, grilled chicken, avocado wedges, chopped cilantro, and diced bell peppers in a serving dish. Repeat layers as desired, finishing with an avocado slice on top.
  6. Serve with a squeeze of lime juice on top for added freshness.
