Ground Beef Lettuce Wraps

A quick and flavorful meal featuring savory ground beef and crisp vegetables wrapped in fresh lettuce leaves.

Ingredients

  • 1 lb ground beef
  • 1 cup bell peppers, diced
  • 1 cup carrots, shredded
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • Lettuce leaves (butter or romaine work well)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks. Drain excess fat, if necessary.
  2. Add the minced garlic, ginger, diced bell peppers, and shredded carrots to the skillet. Sauté for about 5 minutes, or until the vegetables are tender.
  3. Stir in the soy sauce and sesame oil. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  4. Taste your mixture and season with salt and pepper as desired.
  5. Spoon the beef and vegetable mixture into the lettuce leaves. Wrap them up and serve warm.

Notes

You can substitute ground turkey or chicken for a leaner option. For a gluten-free version, substitute soy sauce with tamari or coconut aminos. Feel free to add any other vegetables you love, such as zucchini or mushrooms.
