Greek Feta Roast Potatoes

Crispy, buttery roast potatoes topped with tangy feta, perfect as a side dish for any meal.

Ingredients

  • 2 lbs Potatoes (Russet or Yukon Gold)
  • 1 cup Crumbled Feta Cheese
  • 3 tbsp Olive Oil
  • 4 cloves Garlic (minced)
  • 2 tsp Dried Oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the potatoes by washing and cutting them into bite-sized pieces.
  3. Toss the potatoes with olive oil, garlic, oregano, salt, and pepper in a mixing bowl.
  4. Arrange the seasoned potatoes in a single layer on a baking sheet.
  5. Roast for 30–35 minutes, until golden and crisp.
  6. Add crumbled feta cheese over the hot potatoes.
  7. Finish roasting for another 5 minutes.
  8. Serve warm as a delicious side dish.

Notes

For a spicier version, add red pepper flakes. You can also experiment with other cheeses.
