Greek Chicken Bowls

A flavorful dish featuring grilled chicken, fresh vegetables, and tangy feta cheese, drizzled with creamy tzatziki sauce. Perfect for quick dinners or meal prep.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Tzatziki sauce (store-bought or homemade)

Instructions

  1. Marinate the Chicken: In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and black pepper. Add the chicken breasts, ensuring they’re evenly coated. Allow them to marinate for at least 15 minutes, or refrigerate for up to 2 hours for deeper flavor.
  2. Cook the Chicken: Heat a grill or grill pan over medium-high heat. Remove the chicken from the marinade (discard any leftover marinade) and cook for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C).
  3. Prepare the Grains: If not already cooked, prepare the quinoa or rice according to package directions.
  4. Chop the Vegetables: While the chicken is cooking, chop the cherry tomatoes, cucumber, and red onion. Set them aside.
  5. Assemble the Bowls: In each bowl, start with a base of quinoa or rice. Slice the grilled chicken and lay it over the grains. Add chopped vegetables, crumbled feta cheese, and a generous dollop of tzatziki sauce.
  6. Garnish and Serve: Sprinkle fresh parsley on top for added flavor and garnish. Serve immediately and enjoy your fresh and hearty Greek Chicken Bowls!
