Crockpot Chicken and Broccoli

A simple yet flavorful crockpot dish featuring tender chicken and broccoli in a savory-sweet sauce, perfect for busy weeknights.

Ingredients

  • 3 chicken breasts, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon hoisin sauce
  • 1/4 cup cornstarch
  • 6 cups broccoli, cut into bite-sized pieces
  • Green onions, sliced (optional garnish)
  • Sesame seeds (optional garnish)

Instructions

  1. Season the chicken: In a mixing bowl, season the chicken pieces with garlic powder, onion powder, pepper, and paprika.
  2. Mix the sauce: In the crockpot, combine the chicken broth, soy sauce, brown sugar, sesame oil, and hoisin sauce. Stir until well blended.
  3. Combine chicken and sauce: Add the seasoned chicken to the crockpot. Toss to ensure all pieces are well coated with the sauce.
  4. Cook the chicken: Cover the crockpot and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the chicken is tender and fully cooked.
  5. Thicken the sauce: Remove 1/4 cup of sauce from the crockpot. In a small bowl, mix it with the cornstarch until smooth, then pour it back into the crockpot. Stir to combine.
  6. Add broccoli: Place the broccoli on top of the chicken mixture, cover, and cook on HIGH for an additional 20 minutes. The sauce should thicken, and the broccoli should become tender-crisp.
  7. Serve: Serve hot over rice, noodles, or cauliflower rice. Garnish with sesame seeds and sliced green onions if desired.

Notes

Don’t overcook the broccoli for the best texture. Use low-sodium soy sauce for a healthier option.
