Irresistibly Crunchy Garlic Parmesan Roasted Zucchini

A delicious way to enjoy zucchini with crisp edges and a rich, cheesy aroma, perfect as a side dish or snack.

Ingredients

  • 4 medium zucchinis (sliced into 1/4-inch thick rounds)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup Parmesan cheese (grated)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley (chopped for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the baking sheet by lining it with parchment paper.
  3. Slice the zucchinis into 1/4-inch thick rounds.
  4. Mix zucchini slices, olive oil, garlic, Italian seasoning, salt, and pepper in a bowl.
  5. Add the grated Parmesan over the mixture and gently stir.
  6. Spread the coated zucchini slices in a single layer on the baking sheet.
  7. Roast for 20-25 minutes or until golden brown and crispy, flipping halfway.
  8. Garnish with fresh parsley before serving.
