Creamy Cauliflower Soup

A comforting and creamy soup packed with the nutritional benefits of cauliflower, perfect as a starter or main course.

Ingredients

  • 1 head of cauliflower, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Sauté the onions and garlic in olive oil until translucent, about 5 minutes.
  2. Add the chopped cauliflower and vegetable broth; bring to a boil, then simmer until cauliflower is tender, about 20 minutes.
  3. Blend the soup until smooth using an immersion blender or regular blender.
  4. Incorporate the heavy cream or coconut cream and season with salt and pepper to taste.
  5. Serve warm, garnished with fresh parsley.

Check the consistency and adjust with more broth or water if needed. Fresh ingredients enhance flavor.
