Creamy Carrot Soup

A delightful soup that combines the natural sweetness of carrots with a creamy, velvety texture, perfect for chilly days.

Ingredients

  • 1 lb carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Sauté the onions and garlic in a pot with olive oil until translucent, about 3-5 minutes.
  2. Add the chopped carrots and cook until they start to soften, about 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Lower heat and simmer until carrots are tender, approximately 20 minutes.
  4. Blend the soup until smooth using an immersion blender or regular blender in batches.
  5. Stir in the heavy cream and season with salt and pepper to taste. Heat gently until warmed through.
  6. Serve the soup hot, garnished with fresh herbs if desired.
