Cinnamon Apple Cottage Cheese Bites

Delightful and nutritious bites combining cottage cheese and apples, perfect for breakfast or snacks.

Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with liners.
  2. Combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey (if using), baking powder, and salt in a mixing bowl.
  3. Rest the batter for 5 minutes to absorb moisture.
  4. Fill the mini muffin pan with the mixture, almost to the top.
  5. Bake for 18–20 minutes or until set and golden.
  6. Cool in the pan for a few minutes, then transfer to a wire rack.
  7. Enjoy warm or store in the fridge for up to 4 days.

Notes

Use smooth cottage cheese for best texture. Don’t overmix the batter, and allow resting time for better results.
