Chicken and Sweet Potato Rice Bowl

A comforting and nutritious bowl featuring juicy chicken, hearty sweet potatoes, and vibrant veggies, perfect for busy weeknights or meal prep.

Ingredients

  • 1 lb chicken breast
  • 2 medium sweet potatoes
  • 1 bell pepper
  • 1 cup broccoli
  • 1 cup rice
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) to get it ready for roasting.
  2. Peel and dice the sweet potatoes into even cubes. Toss them with olive oil, paprika, garlic powder, salt, and pepper until evenly coated, then spread onto a baking sheet.
  3. Place the baking sheet in the oven and roast for 25-30 minutes until tender and slightly caramelized.
  4. Rinse the rice under cold water and cook according to package instructions. Set aside.
  5. Heat a tablespoon of olive oil in a skillet over medium heat. Add the chicken pieces and cook until golden brown and fully cooked through, about 6-8 minutes. Season with salt and pepper.
  6. Add the chopped bell pepper and broccoli to the skillet and sauté for another 3-4 minutes until tender but vibrant.
  7. To serve, place a scoop of rice in a bowl and top with sautéed chicken, roasted sweet potatoes, and vegetables.

Notes

Substitute chicken breast with thighs for a juicier texture. Any type of rice can be used. Feel free to substitute vegetables according to preference.
