Cheesy Ground Beef and Rice Casserole

A comforting and satisfying casserole featuring ground beef, creamy soup, cheddar cheese, and tender rice, perfect for busy weeknights.

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese (divided)
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Brown the ground beef and diced onion over medium heat until the beef is browned, about 5-7 minutes.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Make the sauce by whisking together the cream of mushroom soup, milk (or beef broth), paprika, salt, and pepper.
  5. Assemble the casserole by combining the cooked rice, beef mixture, half of the cheese, and the sauce in the prepared dish.
  6. Top with the remaining cheese and cover with foil. Bake for 20 minutes.
  7. Finish baking uncovered for an additional 10 minutes until cheese is bubbly and golden brown. Broil for 2 minutes for extra crispiness if desired.
  8. Serve garnished with parsley if desired.

Notes

Lean ground beef helps keep the dish lighter without sacrificing flavor. For a healthier twist, use ground turkey or chicken. Feel free to use brown rice instead of white for added nutrition.
