Ingredients

  • 1 lb chicken breast, diced
  • 1 cup cashews
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Marinate the chicken: In a large bowl, combine the diced chicken with soy sauce, cornstarch, and a pinch of salt and pepper. Let it sit for 10 minutes to absorb the flavors.
  2. Heat the oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  3. Sauté aromatics: Add the minced garlic and ginger to the pan. Stir-fry for about 30 seconds until fragrant.
  4. Cook the chicken: Add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally until the chicken is browned and cooked through.
  5. Add vegetables: Toss in the mixed vegetables, cooking for another 3-4 minutes until they are tender but still crisp.
  6. Incorporate cashews: Stir in the cashews and oyster sauce, mixing well to ensure everything is evenly coated.
  7. Serve: Serve the stir fry hot over a bed of cooked rice.

Notes

Chicken breast is lean, but chicken thighs can be used for a juicier option. Mix seasonal vegetables to enhance freshness. Unsalted cashews work best for this dish.
