Ingredients

  • 2 cups broccoli florets
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup milk or almond milk
  • 1 cup chicken or vegetable broth
  • 2 tablespoons butter
  • 1 tablespoon flour
  • Salt and pepper to taste

Instructions

  1. Sauté vegetables: In a large pot, melt the butter over medium heat. Add the chopped onions and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Make roux: Sprinkle in the flour while stirring for about one minute. This will help thicken the soup.
  3. Add liquids: Slowly pour in the chicken or vegetable broth, stirring continuously to avoid lumps. After that, add the milk and mix well.
  4. Incorporate broccoli: Add the broccoli florets to the pot. Bring the mixture to a gentle simmer and let it cook until the broccoli is tender, around 10 minutes.
  5. Melt cheese: Stir in the shredded cheddar cheese until fully melted and combined.
  6. Season and serve: Season with salt and pepper to taste. Serve hot and enjoy!

Notes

You can use any cheese you prefer, but cheddar gives the classic flavor. Almond milk is a great dairy-free option if needed. Feel free to add in other vegetables like carrots or bell peppers for additional color and nutrients.
