Ingredients

  • 1 cup oats
  • 1 banana
  • 1 cup cottage cheese or Greek yogurt
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup mixed berries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin to prevent sticking.
  2. Blend the oats, banana, cottage cheese, eggs, baking powder, vanilla extract, and salt until smooth.
  3. Fold in the mixed berries, ensuring they are evenly distributed without overmixing.
