Apple Crumb Cake

A delightful balance of soft, moist cake and crunchy, sweet topping, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 4 cups peeled and chopped apples
  • 1/2 cup brown sugar
  • 1/2 cup oats
  • 1/2 cup flour
  • 1/4 cup butter, cold and cubed
  • 1 teaspoon ground cinnamon (for topping)
  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, ensuring each is well combined.
  4. Mix in the milk and vanilla extract until smooth.
  5. Combine flour, baking powder, and ground cinnamon in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  7. Fold in the chopped apples until evenly distributed.
  8. Prepare the crumb topping by mixing brown sugar, oats, flour, cubed cold butter, and cinnamon until crumbly.
  9. Assemble the batter in the prepared cake pan and sprinkle the crumb topping on top.
  10. Bake for 40-50 minutes, until a toothpick comes out clean.
  11. Drizzle the icing made from powdered sugar and milk over the cooled cake.

Notes

Use any type of apple you enjoy; Granny Smith or Honeycrisp are great options. For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free blend.
